Independence Day 2008

Just got back from a wonderful time at Paul B Johnson State Park. The weather was wonderful and although the park was crowded, there was still plenty to do and space to do it in. The campsite we picked was located right by the swimming area and playground, so the kids enjoyed heading over to play, while we were able to keep an ey on the little ones.
 
CJ & I took our diabolo’s and they were a hit with kids and grownups alike. Many stopped to watch and try them out, and I think some will go home and order some for themselves.

The fireworks display the night of the fourth was beautiful and we had a grand view from the pier that leads to the island.

Gulf Shores – 2008

Just added some pics to a gallery from our vacation to Gulf Shores in June. Mom rented a wonderful house, “Da Beach House” for everyone to enjoy. Sunburns and jellyfish stings excluded, I think everyone had a great time.

Chili’s Salsa

1 Can Rotel (I recommend the rotel with lime juice and cilantro)
1 Can Whole Peeled Tomatoes (14.5 oz can, plus the juice)
1 Tbsp.  Jalapenos (canned, diced, not pickled)
1/4 C. Yellow Onion (diced)
1/2 – 3/4 tsp. Garlic Salt
1/2 tsp. Cumin
1/4 tsp. Sugar

Methods/steps
In food processor place jalapenos and onions. Process for just a few seconds. Add both cans of rotel & tomatoes, salt, sugar, and cumin. Process all ingredients until well blended but do not puree. Place in covered container and chill. A couple of hours of chilling will help blend and enrich the flavor.

Serve with your favorite thin corn tortilla chips.

The Eyes of Texas Rub

1 tsp. dried oregano leaves
1 tsp. dried thyme leaves
1 tsp. paprika
1 tsp. salt
1/2 tsp. garlic powder
1/2 tsp. onion powder
1/2 tsp. ground white pepper
1/2 tsp. freshly ground black pepper
1/4 tsp. ground red pepper
2 tbsp. self rising flour
2 tbsp. soy sauce

DIRECTIONS:
Drizzle soy sauce on steaks before applying rub.
